1 cup almond flour
1 1/2 tbsp xanthan gum
1 tsp baking powder
1 tsp salt
1/2-1 cup water as needed
1. Whisk together almond flour, xanthan gum, baking powder and salt in a bowl. Add 1/2 cup water and whisk well, adding additional liquid as needed to reach a rollable consistency. Allow mixture to rest for 10 minutes.
2. Heat a large nonstick skillet over medium low heat. Lightly oil the pan. Using a 1/4 cup scoop per tortilla. If you have a tortilla press, wrap press in a plastic wrap and place the measured dough onto the press. Press the tortilla firmly. Alternatively, if you don't have a press, place dough between two pieces of plastic wrap and roll out to 1/8 inch thick.
3. Place pressed dough in the preheated skillet. Cook for about 1 minute or until slightly browned. Using a spatula, flip the tortilla and cook on the second side until lightly browned, about 1 minute. Remove the tortilla and continue with the rest of the dough.
